Chicken Arroz Caldo (Pinoy style)

Chicken Arroz Caldo is one of the best snack anytime you want to eat. It is a Filipino Congee that is made with chicken and glutinous rice and topped with fried garlic, onion and tofu. This is a good snack when you feel tired of the whole day from working or walking in the street.

  • 2 1/2 cup glutinous rice (washed)
  • ginger sliced thinly
  • chicken breast cube
  • 1 chicken knorr cube
  • salt
  • ground black pepper
  • fish sauce
  • spring onion
  • fried onion sliced thinly
  • 1 whole fried garlic (chopped)
  • fried cubed tofu
  • boiled egg

Heat the pot into medium heat

Saute ginger or until aroma comes out

Then cook chicken

Add the washed glutinous rice and cook for 2 minutes

  • Add water or Chicken Stock and stir constantly to prevent from sticking to the bottom of the pot.
  • Add the chicken knorr cube (if you use chicken stock), skip this step. Let it boil.
  • Cook it in a low heat. Turn off the heat if rice is already cooked.
  • Serve it with your favourite toppings like boiled egg, fried tofu, fried garlic and onion, and spring onion.
  • It is best to eat this while hot.

If you don’t want to use a knorr or any artificial flavour, you can just replace it to a real chicken which you cook it with water and boil it to have a chicken stock. Just cook the bone and remove the meat.

In that way, you can have a healthy Chicken Arroz Caldo.
